Title: Cold & Spicy Noodles

1/2cCilantro; finely chopped
1 1/2tbTahini
1 1/2tbMayo, fat-free; -=or=- soy mayonnaise
3tbMiso
1 1/2tsSesame oil, dark
4 1/2tbOrange juice
3/4tsPepper, red; crushed
3 Scallions; finely chopped
3/4mdPepper, red bell; minced
6cUdon or soba noodles; cooked ----per serving-----

  *gm protein
  *gm fat
  *gm carbo
  *mg sodium
  *gm fiber

IN a large bowl, combine cilantro, tahini, mayo, miso, oil, orange juice and crushed red pepper. Toss in scallions, bell pepper and noodles. Cover bowl tightly and chill for 3 hours or overnight. Serve cold, tossing again lightly before serving. Serves 8.
